I started doing this after I bought AC50s' and liked how I skied them. Started shimming flat all my other skis. I just got another pair of Mojos' and am likely going to mount them on Kendos' which normally get the flatish Jester binding. Should i shim these too? Is there a metric which i can look at to help decide?
Should I continue to shim up my toe pieces?

If a flat delta is working well for you on other skis then by all means I think you should keep things consistent and shim the Mojo so that it is also flat.
Just wondering at how you arrived at the idea to shim the AC50s. Was there an actual "diagnosis" of a fore/aft stance problem or did you just decide you wanted to test it out and see what the results were?
