demo bindings generally have more slop - particularly in fore/aft, somewhat lateral depending on the binding design. As for improvement in ski-ability and quickness from edge to edge, you'll get a whole lot of people saying they can tell the difference. I am not entirely convinced. You will likely have higher stand height with the demo bindings as well.
-increased slop (minor in my opinion, unless u plan on racing on these 1010s)
-increased stand height - (feels funny at first, but you'll get used to it)
- worse at taking drops secondary to less elastic travel, may not be as bomberproof.
As for non-demo binds vs other non-demo binds.. minor differences. dunno why u are talking about dukes - they won't do shiznit for quickness they are for slackcountry touring.
