Never been to Far Hills, but I've been to lots of places in Norway. Don't mean to make this difficult for you, but to be honest, no matter where you go in Norway, you will most likely find great XC opportunities. The possibilities are close to endless. Some of the great places I've been to are Beitostølen, Telemark, Geilo, Jotunheimen, and the list goes on... But those are the bigger and more known places.
I'm sorry but I can't really help you with the acoommodation if a B&B is what you are looking for, except that I know that the larger places (like the ones mentioned above) will most definitely have good accommodation. Just google it. If you are a bit open minded, I would really recommend going from cabin to cabin. The norwegian tourist association has lots of cabins around all of norway which you can hike/ski to and from. They also have lots of routes and maybe even guided tours. If you go to their website you will find more information and maps. It is also a great way to meet new, likeminded people as well as experience some of the norwegian cabin culture.
As for sweden, I've only been to Åre, which is mainly an alpine place, but with great cross country opportunities.
