iWill is correct. Deliberate1 is wrong.
They do not speak high French in Quebec, but Quebecois -as a generic description - with localized dialects such as joual around Montreal, Acadian French in the north east, etc. You will find speaking your textbook, "Parisian" dialect alienating and frustrating. There are people there who can be real pains in the ass about making the point that you're not speaking "properly" and it can impact your day-day to experience for even something as simple as ordering a sandwich.
That said, if you are looking at:
1) good skiing
2) practicing your French
Then stick to Europe. The skiing anywhere in Quebec may be great for a weekend, but you will *very quickly* get bored spending and entire season compared that to Euro regions, as the resorts are tiny compared to what's on offer on the continent. In Quebec, the resorts are separated by small towns - some with charm, many without - and little to do. You can go to Vermont or upstate NY for a change of scenery, but that's not much better. We limit our ski trips there to 3 days, because by the 4th, you're bored of the terrain and the resort. I spent a season teaching in Austria and after a full season felt like I had only scratched the surface of the local ski area and I was a short drive away from places like Munich and Innsbruck. Even Quebec City gets old after 48 hours. Montreal, on the other hand is a really wonderful city. Spent over 100 days there on business one year and was never bored.
All the comments about the cold and ice are true. -30C is more the norm than the exception and the snow is bulletproof until spring = when it can melt in a flash.
Quebec - and the rest of Canada is not only still very provincial (I can say that - I'm a resident), but it takes a lonnnnggggtime to travel anywhere. 8-10 hours from Quebec City to Toronto. 6-8 hours from Montreal to Gaspe. 7 hours flying or 6 days driving to BC. Etc., etc., etc.... Compare that to hopping on a train or the highway and being in another country in an hour or 2.
