Good question, which I'm not going to be able to answer very well. I assume that engaging the FreeFlex stiffens the ski slightly, since springs are place under tension, but with the benefit that the resulting suspension system smooths and dampens vibration. I've noticed that lighter kid racers (or more likely the shop tech or parent) often leave it off. My boy skied his FR11s last year with the FF off, but this year I turned it on. He hasn't complained.
Not having the FF engaged is a big advantage when mounting though ;) You don't want to be fighting those springs while trying to drive the screws.
Bottom line: I see no advantage to the Pro over the Plus and would happily get the older binding if cheaper.
