 I keep reading about people having "slop" in a binding. Especially if it is a modular plate, or demo system, but what is slop?

It means that components that shouldn't be moving, relative to one another, do move. There might be some wear or other factor that creates some space between moving parts that isn't supposed to be there. It means that the movements of the foot don't accurately or precisely get transferred to the ski, which creates control issues for the skier.
