Found this article when looking for armour. Bizarre but interesting. Makes you want to try them!

Ha ha ha.  Yes, in 20 years, our race gear will look completely different, because, due to Global Warming, we won't have snow any more, and we'll be skiing on rockered skis on Astroturf on public highways!  Sure, this could work, but it's kinda what Atomic has already done with the Beta concept.  And as far as what they're actually showing here...okay, explain to me how the inside edges of both "skis" that are on the same foot are supposed to work together.  And if that's a happening thing...why not 6 edges per foot?  Or even 12?

People apparently don't understand how a ski edge works.

It looks like the "double skis" have some sort of coordinate hinge under the deck the binding is on, so that both skis on one foot incline together (bringing two edges into contact with the snow).

Unfortunately, as mjp5 already noted, aside of the Rube Goldberg machinations required to do what they're trying to do, what they're trying to do isn't advantageous anyway.
