"You guys know it isn't as simple formula as it was so many years ago."
But it is somewhat simple in terms of weight, ski flex, speed, turn radius, and terrain.
The ski YOU asked about in your first post is the Head Peak 88. That ski, like every other in Head's line as well as other manufacturers' lines, is built with certain "optimum" lengths for certain weights in mind. For that ski, a 200# plus skier would typically ski at least the 180cm length if not the 186.
You also talked about viewing the drifted new snow, etc, from the chair and wanting a ski for that. You ALSO mentioned that you can make a short turn pretty much anywhere you want, even with your "old, long skis".
So given all that, I hope you'll forgive me for assuming that you were asking for advice from people who might have a little more experience with various models, makes, and shapes of skis than you. instead, it would APPEAR that what you really wanted was for someone (anyone) to tell you that what you've already decided is the smartest/best decision for you.
Based on your subsequent posts, I think that a 165cm Head iSL is the perfect ski for you.
I'm older than you, by the way.
