Demo advise for all mountain skis

I need some advise for all mountain skis to demo. I'm 180 lbs 55 yr old male advanced skier. I ski East and also a week out West. I currently ski on Dynastar 4800, but need more edge grip. Otherwise this is a very good ski. I'm currently looking at the Head IM , Elan magfire, Atomic BlackEye.

Blackeyes might be nice, what about Head Peak 78 or 82?

 I demoed Atomic Savage Ti early this year and quite liked them, also the new Blizzard Magnum IQ Max are definetely worth trying (especially the 8.7 version, heard some people saying these are the best allmountain skis ever made), but I bought 2010 Salomon Tornado Ti Z12 at the end because I found them to be the best fit for me (they were the best also for short arches and overally felt most stable from all allmountain skis from this season which I demoed).

I'm skiing the elan magfire 74 in a 176cm and it has plenty of edge grip, ripping hardpack the last few days and it is a blast, I find it a bit stiff for bumps but I will eventually dial that in. I'm 6' 205lbs and it is plenty of ski for what I want to do on groomers.Has good amount  of energy in it.

My Mag 12s hold an edge better than anything I've owned. Including RX8, RX9, etc.

I demoed the 2010 Volkl AC30 last week in Steamboat, and I was quite impressed. I skied mostly in the trees and in bumps, and it worked very well. To get to those runs, I had to go through some blue and black groomers which had quite a lot of icy patches. The AC30 held their edges very very well. I think you should try them. Last years AC30 have a 76 waist and this year has 80.

I'll second the edge grip of the Peak 78.  I skied them on a hardpack day at Keystone in December and they were impressive.  That nasty skied up area leading to the gondola base was easy on em.
