I handle most of the server-side, non-interface related work, so I can answer a couple of these questions.
You can post off-site images in threads and wikis, but we don't allow them for avatars for several reasons. The long and short of it, is we don't have enough control to be able to guaranty a positive experience with offsite avatars.
Your avatar shows up all across the site, in a variety of different sizes. To do a good job of the image scaling, we have to do the scaling server side. Browsers do a terrible job of scaling images. What's more, we optimize the scaled image to limit bandwidth usage, which keeps avatars loading rapidly.
Additionally, we can guaranty images hosted on our site will load in a timely manner; we can't be as confident of images hosted elsewhere. The last thing any of us wants is for a page to take forever to load because one guy has a 4 megabyte avatar image hosted on his desktop PC :)
There isn't a "stuff I've uploaded" album currently, but the general issue of better image management is on our radars.
In answer to your other question, post counts are being maintained, but are currently not displayed while we work out a minor performance issue.
