Thanks again for all the suggestions. We ended up in Southern VT at my parent's house this weekend, so we went to Bromley on Sunday. My girlfriend took a 'Beginner's Circle' group lesson which turned out to be a private since there was nobody else there (it was pretty cold up there - single digits to low teens). Within an hour they had her off the rope tow and on the small beginner's lift. Only a year earlier she was on that same hill, strapped to a snowboard with completely purple knees, crying.
I was really impressed, and she was really happy. she kept saying how much fun she had, which is a great sign, since we have a few more weekend trips planned this winter in Maine and NY. The instruction she got was really good, the instructor was friendly and they really bonded, and she took advantage of my girlfriend's past cross country skiing experience in helping to get her down the hill with some level of confidence.
Next time there will be more lessons for sure, because she's still gingerly linking wedge turns. But she hardly fell at all, looks natural on skis, and without her even realizing it she was starting to get her skis parallel between turns. not bad for her first day.
