When I read your OP stats and that you were considering the Crimson Ti's I jumped out of my chair ready to...to...to uh somehow stop you. Then I read that you decided to demo instead, and...uh...relief....
Take it from a fellow lightweight skier (I'm 130lbs, level 8/9 and been skiing 40 years) that some of the beefier skis on your list (the Crimson Ti, AC50, Blizzard 8.7's, etc.) will be too much of a handful for you. I'd stick with the skis that are more appropriate for us (i.e., less or no metal) like the Dyna 8K, Watea 78 or 84, iM78, K2 Xplorer, Salomon Fury, etc. Based on what I've read even the Blizzard Cronus or regular Crimson may be a bit too torsionally aggressive for a light weight but YMMV.
Your final choice will most likely be dictated more by what you'll be able to demo and whether you end up preferring a more groomer/hardpack oriented ski (ala the Head/Fischer 78's) vs. one that might be more versatile (the 80mm+ skis). Heck give the Crimson Ti's a whirl just to get them out of your system, but, while I could always be wrong, I think you'll find that they'll be skiing you rather than the other way around.
