I have to put in a plug for Sunshine since that is where I learned to downhill ski. Lots of green terrain for the beginner, and some black and double-black for you. Whistler is also a good bet (although the only lessons I've taken there have been at the black level, so I can't vouch for the beginner program although I thoroughly enjoyed my lesson). Of the western Canadian resorts, where I've skied enough to scope out the greens, there are several that would be good for the beginner (lots of green terrain, gentle gradient on the greens and easy transition to the blues). Sunshine, Marmot, Big White, and Sun Peaks come to mind. Of those, you'll find Sunshine, Marmot, and (possibly) Sun Peaks have the most challenging terrain available for you.
