You should guess less, do more.
I've noticed no difference in how long the edge lasts whether I go with a 86.5 degree or 87.5 degree acute edge. I skied a pair of slalom skis for a year at the more acute setting. And I'm not someone who is particularly interested in polishing edges, either.
The bigger problem with the 4 and 5 degree bevels is being aggressive enough with sidewall removal and ski shaping. Helps to have power tools or more patience than me.
As to how it actually skis...skiing gates on hard snow I think the more acute settings are worth it...skiing anything else I wouldn't bother.
