I wanted some easy homemade baked cookies using things that were sitting around the pantry. I also wanted them to contain at least one ingredient that could be considered healthy. I combined some recipes and came up with this. I proclaim them yummy. These are fluffy cookies. This has been officially tested at 5400ft.

Chocolate Chip Applesauce Oatmeal Cookies

1 c. white sugar
1 c. brown sugar
1 c. shortening
2 eggs
3 1/2 c. flour
2 c. oatmeal
2 c. chocolate chips
2 c. applesauce with 2 tsp. soda added
2 tsp. cinnamon
1 tsp. salt
1 tsp. nutmeg
½ tsp. ground cloves

Cream shortening and sugar. Add eggs and blend well. Add remaining ingredients and blend. Drop by spoonful onto a greased cookie sheet and bake at 350 degrees for 11-12 minutes. Remove from cookie sheet immediately or bottom of cookie will burn.

You may need to put the applesauce/soda mixture in a glass bowl. It does expand some.

High altitude tested – adjust flour to your altitude. Dough should be firm.
