My own would probably be different than yours as you seem to think you want stiffish skis whereas I like stuff in the "medium" flex range and I don't pursue bumps much. When I reach the maximum comfortable velocity of whatever I'm skiing on, I'll just slow down a touch rather than think about a stiffer ski. That's just me.
There are a lot of great stiff mid fats like the Volkl AC-30, Fischer Cool Heat, or the Nordica Top Fuel. All shine on groomers, hard snow, and busting shallow crud but none are exactly great in bumps. For a medium firm mid fat with a nice penchant for bumps you might think about the Dynastar legend 8000.
My own mid fat choice is the Mythic Rider narrowly over the Fischer Watea 84, Solly Fury, and Atomic Snoop Daddy (yes the MR is
on the widish side, but remember, I don't chase bumps much) This is my #1 keeper if I could have only one ski.
My #2 keeper is a fat ski. I test 10-15 different ones over the course of any 12 month period and there are lots of them that I like and only a few that I don't. Here again, I prefer the medium flex range and some skis that hit the spot for me are the Volkl Gotama, Atomic Pimp, K2 Coomba, Line P-100.
You can make an argument for all the skis I mentioned in both categories and several others as well. All are great, none suck and there are a lot of skis that I'd be just as happy to own as the several that I have.
