Both the U of U and Westminster are good schools.
Westminster is smaller, more expensive. People I know that went/go there have good things to say about it.
U of U is larger, more of a commuter school. I went there years ago and am still gainfully employed.
If you can get a full tuition scholarship to the U of U ... well, I think you could certainly do worse.
If you want quick access to pretty good
skiing in the winter; hiking, biking, climbing, etc in summer, then SLC is hard to beat.
