Hopefully, these rough graphics help to visualize how easy it is to alter the angle 1° to a 2° edge (or a 2° to a 3°, etc). It's easier to start with a shallower angle and adjust than the reverse (from a 3° to a 2°, for instance):
FWIW I played around with various angles and multiple skis this past winter and was fine with either a 2° or 3° side edge. I generally found the 3° to be easier and quicker to set and release an edge and a 2° easier to feather in an out of. By messing with my 10 year old's edges, when I bumped the sides to 3° from less, his confidence went through the roof and he went from a slippy/slidey turner to a carver on very steep terrain and firm conditions.
