Most "Pizza" today is junk .... hyper processed "cheese type food" .... with a "patina" of out of the can commercial "Raguesque sauce".
Take a look ... most of the crust arrives now in commercial pans with little tasteless WonderBread thingies. Hell, it is now a de minimus "culinary art" and many of the Pizza shops are now run by Mexicans ... Koreans ... etc. here in NJ.
Gone are the days of magic. We could walk a few blocks to the Italian section where the huge pots of home made sauce simmered on the stove and the cheese was the real deal ..... Mrs. Cashianni .... I miss you so much.
At the one remaining place in Trenton NJ .... often so hard to get a seat ....
Sausage with a bit of fresh garlic and a tiny bit of black olives ..... never extra cheese cause the crust is soooooo good!
