It's explicit in the rating system that the green/blue/black ratings are relative to other runs at that area

This also begs the question, "easy for whom?"
There are certainly areas where many blues are not
easy for an intermediate, or even for a somewhat advanced skier, at least depending on the snow conditions ... and, I suppose, what "easy" means. To me it means that the relevant person (for whom the run is "easy") can ski it repeatedly with about the maximum amount of grace and style he or she can muster on any run.
