Spotted dog, soused hog's face

After reading all twenty of Patrick O'Brien's Jack Aubrey books, I still haven't puzzled out what spotted dog and soused hog's face are. They sound nasty; are they something I would want to serve at a dinner party?

Nothing like a head cheese; am surprised the Soused Hog's Face ingredients did not include sweetmeats (organ meats). Yum!

HA!! That series is the best. I just started reading it again and am 1/2 way thru the Mauritius Command.

I THINK Spotted Dog is some kind of pudding (British type) and I THINK Soused Hog's Face is just that like a hog's head stew or something like it. (I remember a passage about JA slicing off some of the hog's jowl)

You didn't mention Drowned Baby though. Doesn't sound that great either
