Like my pal cloudpeak, I hear consistently good things about Lyon's. And I've watched their instructors ski - they are consistently excellent.
Also, given what you are seeking, I'd suggest private (or if there is something like a semi-private) rather than a bigger group lesson. It'll go faster if you are with people who can smile rather than who are afraid
I gather you are stuck on Daisy? As a next step, try Hogsback and taking Rock n Blue to Daisy. Or take the gentle way down from Brooks. If you can possibly avoid crowded days and can be there when the snow is soft you will find that these trails are pretty friendly and you will be able to laugh if you fall.
Finally, Stevens on weekends in Jan is terrible for crowds. They totally increase the intimidation factor on the main trails (with good reason). If there is any way you can get up there on a weekday, you will enjoy yourself more and progress faster. Nights are sometimes a good option on some of those trails.
