There is a 55mm standheight limit in Masters races. I don't know that they ever measure it, but that is the rule.
If (as I think) you're talking about this on top of the ski:
+ Standard plate that comes with the ski (I don't know if it's 17mm, but that's in the neighborhood)
+ Additional plate (10mm)
+ Binding, with some additional rise (brake, etc.) (c. another 17 mm or so)
I think you're going to be over. On current skis, Atomic sized their race equipment so the ski + plate that comes with it + race binding would be a bit under 55mm. I think there's a little extra room, but not 10mm.
Also, assuming you're talking about the older ESS Var binding (not the Atomic-branded race version), it's possible it could have more height itself. In the pre-Neox bindings, the non-race version of the Xentrix had too much height. Someone else probably knows the details.
