Which dates exactly were you thinking about? The ski area at Teton Village opens on December 3 and there will be skiing on good manmade snow even if mother nature hasn't come through yet.
Just in general, Jackson isn't normally considered one of the best destinations for early season skiing, although Grand Targhee usually is. If you can hold off making reservations (or make ones that you can get out of), I'd hang on for a couple of weeks. If you pay any attention to EpicSki, you'll know when we start getting hit hard by snow - I just can't keep a thing like that secret.
