Diet could be your problem. It's very hard to compensate for mother nature's design; animals with binocular vision, eyes on the front of the face and eye-teeth of the canine variety were meant to eat meat at least once in a while.
Assuming that after 21 years at it you have learned to fool mother nature, you should consider the following points.
Skiing all out all day takes conditioning. If you only do it every once in a while, you will likely only be able to get a few hours in.
Extensive (unfunded) experimental testing in this regard last winter (while out of shape and only skied less than 20 days total) resulted in the following observations.
Blasting along on SG skis doing only DH type turns and avoiding moguls did not leave me tired or sore (except for a nagging feeling like I pulled something in one of the compressions).
Skiing with someone else, anyone else, slowed me down sufficiently that I did not get too tired or sore.
Testing out short-radius equipment trying to see how much it would take to overpower it and then skiing at the limit of that equipment making as many turns as possible while skiing as fast as safety would allow on a relatively uncrowded hill left me very sore after just 4 hours or so.
