Salomon 757's and 727's

I like to ski, but I've always rented my equipment from the resort, so I don't know a lot about equipment. I just purchased two pairs of skis from a friend, one for mysel and one for my wife. I can choose from a selection of three pairs. (I can take any two that I want of the three.) My chioces are as follows:

K2 SR-22 skis with Salomon S727 bindings
Elan Omni 8000 with Salomon 757 bindings
Elan Omni Chiara with Salomon 757 bindings

When I took them in to the ski sop in town, they said that all three were unindemnified. I knew nothing of the list before talking with the technician. (I think it's just some big marketing scheme.)
Anyway, my guestion is this: Which skis would be better to purchase? Which bindings will hold up better? Etc? Oh, there's a hitch. My boots only fit on the 727's. I already slid the heel back as far as it would go on both 757's. Is there a way to make the bindings bigger without remounting them?

Also could you tell me some tips on how tight to make the bindings? My wife is a beginner and I am beginner/intermediate. thanks.

There is a reason those bindings are indemnified. And it's not just a marketing ploy...

This person is not your friend if he/she sold them to you. They are unsafe by todays standards. The 757 is notorious for blowing heal pieces, I would respectully return them and ask for your money back.

All true. Broke a Heel years ago and I mean years ago. Bindings are cheap compared to Surgery.

Bindings aside, I wouldn't put my worst enemy on theses skis. I would sooner see you keep renting than to ski these pieces of garbage. It is not like these were even good skis in thier day, they were low to mid level "Hermans specials". I cannot say enough bad things about these combos. As they said in Monty Python and the Holy Grail...."Run Away..."

S727 is older than DIN settings standard.

Just the first year 727, from the second year, the DIN was inplace. the first year ones could be "torqued" to pass for a while. I would sooner ski a 25 year old 727 than a much newer 757, they were just plain junk.
