Yes it will leaves holes but they are normally plugged with inserts by the shop. I don't know if that ski is toe mount or center mount. That makes a big difference to what you need to do. If they are center mount and you need remounting you must remount toe & heel. If they are toe mount you would only move the heels.. It also depends on how much they need to be moved. You don't want the new holes too close to the old.
Currently, if the toes are mounted correctly but the heels are off, that is being negated by the fact that you would just adjust the forward pressure (heel) properly for each boot. Your boots would be in the same place as would the actual heelpiece in the track. It is only the track and platform itself that is mismounted. Again the difference is compensated for by adjusting the forward pressure properly for each boot. If the toe and heel are mismounted, one boot would be too far forward or too far back compared to the other when forward pressure was properly adjusted.
