Yeah any ski can be manipulated to turn or slid but a ski will make the radius turn it is designed to make and it will only do it when the pressure required to create that arc is applied. I have four pairs of skis that I currently ski on and none of them ski even similar to the others. Some are tighter radius and stiff others are larger radius and soft etc.... I would highly recommend participating in a demo day at your local mountain and truly try out all of the options if you feel this way, its a big world out there I would hate to see somebody miss it.
I wouldn't say there is no difference, yes the skis are different, as I noted I prefer to ski on Atomics, I like the feel and response, but as you get more efficient in your movements, the things that most people comment on become a small nusance rather than a stumbling block. For instance edge to edge response, I don't notice it, or a lack of it on most skis, even the new wide ones that receive the "slow edge to edge" comments. Now put me on a slalom race course, and yes I'd probably whine about the response of say a wide Metron, but now were talking extreme performance needs, not the average day on the hill.
