I am 6'1", 195lbs and a former instructor/coach who skis the 2003-4 5 Stars in 182cm. Have found no problem with them and they are more stable at speed than the 175s. Tried both lengths and the 175s were less stable at speed on hard snow (what I ski most) and I went with the 182s. They also had a little more float in soft snow (have not skied them in anything over 6-8" deep).
However, I understand this years 5 Stars have additional fiberglass over the edges and I would probably ski them at 175cm. I tried the 6 Stars last year and liked the 175s.
Also, one of my sons (6', 170lbs, ex racer) also skis 182s and loves them.
I don think length itself is a consideration. Length is only relative to your physique, how you ski, where you ski, and the ski design itself. I am looking at some new Atomics in a 170 or 172cm length but want to try them first.
