It all depends on the conditions you ski in and your ability. I have a friend who had the 75's. He had a warranty issue with the bindings and they ended up in the shop for a couple weeks waiting for parts. In the meantime they gave him a set of 85's to use, When his skis were finally fixed he couldn't go back to them. He ended up buying the 85's cause he liked them so much better.
If you are generally an on piste skier buy the 75's. If you like to rip up the crud and are into a lot of pow' conditions definitly go for the 85's.
I skied the 85's with bondage gear a couple times. I loved them. (I would love to ski them with freeheel gear on them)
My advice is demo both them decide.
