True body weight for ski/DIN selection?

Weight is such an important factor for skis/bindings. I have always been confused about the following.

I am quite a lightweight at 160lbs naked. However in full ski gear with boots, loaded backpack and Camelback I am probably 20% heavier. so which weight should I use for selecting skis (I do not like very stiff skis) and setting bindings?
