I thought it was pretty standard to be able to strip out all the "keep warm" bits.
I'm one of those warm-blooded types who skis in shorts and a t-shirt under a North Face jacket (without the fleece lineer) and North face ski pants (uninsulated). I only go to warmer underlayers if it's going to be below 20-25 all day.
I can't remember the model, but I've got a 3-4 year old Giro helmet, and I was able to remove the ear warmers and all the other warming bits in the helmet. I kept the foam padding for fit/comfort, but everything else came out very easily.
If it gets really cold, I can fit my jacket hood under the helmet (admittedly it looks dorky) or wear a balaclava if it's REALLY cold (I've only down that when it was well below zero).
I'm surprised you've had so much trouble finding a helmet that works, but they do exist, or at least they did when I bought mine not too long ago.
