Thanks A'man. I have the Artech setup that's in your link. I use my two stronger clamps though. I know some don't like that set up but I do and have been using two clamps for years.
What I noticed about using the 7* guide with a panzer, is that it does all the heavy lifting to include the top part (furthest from the base) of the metal edge. As noted above, you can trim back the side wall closer to the tail and tip. When I came back around with the sidewall planer, it slid through whatever that plastic is above the side edge like it was soft butter.
When it came to sharpening the edges, What a breeze. There is a little less edge and it is very easy to see it, set it and polish it.
In my rough drawing below, you can see how my edges are set; .75 base edge, 3* side edge and the dark gray is the 7*. This takes away some of the side plastic and side edge. You can see how nothing will be in the way of sharpening the side edge and I don't have to worry about nicking the sidewall planer blade on the metal of the side edge.
I have another pair of skis I need to do this to and will try to get some good pictures of what is happening.
