What is deal about plates? Head Infernos

I love reading this site.  Best online.  You guys were helpful 2 years ago when I purchased a "new" pair of Head Monster IM82's.  I had always been on Monsters but mine wore out.  Since I read they de-tuned and took out the metal from the newer Head line, I found an unused pair of Monster '82's online for a good price.  You folks helped me choose a binding and recommended to mount it flat (no plate or riser).  I LOVE them but the one thing they (nor I) is not especially good in is powder.  I ski Tahoe almost exclusively.

 

So the other day I noticed a ski shop in CO offering new Head Motorhead Infernos (181 cm) plus unmounted Tyrolia Peak 11 FAT bindings for $349!  I read some of the reviews here and when a couple of expert reviewers compared them to the legendary Monsters I was understandably excited.  I know they will help me in the powder and, who knows, could even become my main all-around ski.  I've never owned different skis for different conditions, but this is deal I don't think I can pass up...

 

My question is, do I use a riser plate?  It appears the bindings don't come with one (like the old Railflex for example).  What is this deal with plates?  Is is for racing only?  I don't understand the concept.  This is definitely more of a powder ski than my 82's but people say it's pretty good on the front side too, which I'll still do a lot of.  Plate or no plate?  Thanks for reading, sorry to go on so long, love skiing and love the site!

no plate. You like the iM82 flat, there is no way you want a plate on a more soft snow oriented ski.
