In general, what size brake fits with a ski of "XX mm width? What size brake is too large?

In general, if you have a ski of XX width, what is the range of ski brake that is appropriate?   When is a brake too wide for the ski?

For my recent purchase of 98 mm wide skis the shop fitted a 110 mm Marker binding. This was the same width binding as was mounted on the 98 mm demo skis I tried at a different shop. They indicated that Marker went from 90 mm to 110 mm, and that bending the 90 mm to fit flared the edges of the brake out too far - it could catch with enough lean angle. My bindings work fine although I wouldn't want to be too much wider.

In general, the brake width can range from about "XX-5mm" to "XX+15mm."  I think it either Level Nine or Evo that states they should not be more than 15mm greater than XX.  My son's 88mm skis have 80mm brakes on them.  The brakes had to be bent but they do work.
