Concave tip and tail.

My wife's Volkl Unlimited AC skis are concave in both the tip and tail.  So, to correct the problem, I brought the skis in for a stone grind.  Well, the shop tells me that the skis are designed to be concave in the tips and tail and and Volkl does not recommend grinding the skis flat.  Does this seem right to you?  Why would a ski manufacturer engineer a ski with a concave tip and tail?

The skis shrink concave when the epoxy cures.  If not too much, it can be stone ground out.  If it is a lot, the ski will ski OK if there is just a flat section of about an inch wide on each side next to the edges.

Change shops.
