A gourmet bistro offering food “served within strict kosher guidelines” now exists at the Canyons in Utah.   The observant, along with anyone seeking excellent bistro fare, can now enjoy this experience at the Bistro at Canyons.  The restaurant is housed in the Silverado Lodge located a short walk from the gondola.


The chef overseeing  the Talisker Signature Restaurants (including Bistro at Canyons) is John Murcko who was recently named “Best Chef in Utah” by Salt Lake Magazine.  My friends and I enjoyed excellently prepared meals which included Portobello Gratin, Smoked Duck Breast (with a ragu of braised red cabbage, fennel, apple and duck confit), Mustard Crusted Wild Salmon, and a fabulous Prime Steak Burger.  The service was also first rate, with the wait and host staff familiar with each dish and the appropriate wine pairings.   During our 8-day stay it became evident that Talisker is placing an emphasis on food quality (working with local farmers, growers and ranchers) and staff training. 


Traditional Sabbath meals are also available on Friday evenings and Saturday afternoons.  A small Shul is located adjacent to the restaurant for those seeking orthodox Sabbath services.  Mashgiach t'midi is provided by Rabbi Yosef Kiszenberg.

Note: I decided to author a restaurant review rather than the typical TR during the snow drought.  Coverage is very good where there is snowmaking (mostly groomers) throughout the four areas I recently skied in Utah.  Ess gezunterhait!
