Just to be clear. I generally get the skis tuned professionally, including setting the base angle. Then I use the following edge angle guide
Along with files as needed and coarse and fine diamond stones to keep the side edges sharp.
I do not shapen the base, I always sharpen the side edge, and I only once noticed a burr, an obvious burr after using a file, which I removed and then resharpened with stones.
Maybe I have no ski ability, and maybe my skis are "unskiable", but I guess after 30 years of skiing 0.5-2 and 0.5 -3 razor sharp edges, and seldom any problems with a bur I got used to it. On the other hand, my daughter seemed to have no trouble skiing the skis I prepared for her and she has little experience.
