Hi Brian, Quiver Killers seem cool, but I also want the ability to move the binding forward +1, when I feel like making a style adjustment.

Using your own numbers, the Speedlock set up weighs over 1/2 lb per ski more than the Jester. It is over 10 mm higher. Now to you, or Taxman, a 1/2 pound may be featherish if you're not skinning, but to most of us, it's significant. As in about a 12-14% increase in the weight of a single unmounted ski. In fact, that's the difference between a midfat "light" ski, such as a Fischer, and a "heavy" ski such as a Head.
And to you, 10 mm more than the Jester may be nothing, but it's a substantial difference in terms of the biomechanics of tilting a ski over or keeping it stabile. Put another way, it's over twice as high as a Jester. If you think that won't impact handling, you never raced and you failed physics 1.
Bottom line: In skiing, small differences make up large effects in terms of a ski's handling. But truth is, you really want to put on a Speedlock. You've pretty much made up your mind and want enough pro votes here to confirm your decision. So sure, I vote yes. Slap on a Speedlock and all good.
Weight per single pair of skis, if not used for solely alpine, I would agree. However, 3 sets of plates & one set of bindings over 3 pairs of skis = weight saving and easier portage (3 pairs of skis in a bag, very easy).
For AT - well I have Dukes; they ski well, tour crap and the climbing bar is a PITA. Freerides (also have), don't ski as well, high stand height, though excepting for frankenstride, they tour well and have one of the best climbing bars going. Hence I'm converting my AT skis to Dynafit/Onyx (with killer Quiver mounts).
Re stack height, it's a matter of personal choice, but I've just replaced Dukes with Speedlock TT/Vist 614 on my Stormrider XXLs. The stack height is lower, I've been able to fine tune the binding placement and as I'm not using the XXLs for AT anymore, its suits me. YMMV.
