This past weekend i tested the volkl AC50 163 on hard pack eastern snow. I am 6 ft 185 and usually ski a 170 or 177, but found i was pleasantly surprised by the 163's performance. would it be a mistake to buy these skis in a size down than what i am accostomed to? what are the trade offs?
downsizing - is it not wise to buy a a smaller ski?

Welcome - There are A LOT of threads about length. Suggest a search. The AC50 is a beefy ski, so you could probably get away with a 163 and find it easy to bend, nice at moderate speeds on groomers. You wouldn't like it so much at speed in crud or variable snow, which is what it's designed for...I'm 6', 165, and like that series in 170, as a reference point.
