I have been on the same quest.  The Cloudveil's were just to bulky.

My favorite, which is not available anymore is the Marmot Vortex.  The Marmot Storm King is close to the Vortex, but just not quite there.  Both are shells only so you have to layer.  My Vortex is 3 seasons old now and will still be my jackets of choice.

I have tried to replace it, and the only jacket that I feel comes close is the Salomon Adrenaline.  My problem with the adrenaline is it lacks pit zips.  It does have an "event" type stretchy material in the pits though and is fairly comfortable.  When layered with their "liner" though, it can feel a bit bulky but it is fairly warm even without the liner which is not softshell.

They also have two other softshells that i think are decent as well with the EVO and Snowtrip.  My wife wears the snowtrip and loves.  It lacks a lot of the "extras" you want though, but the material it is made of is probably the toughest (in terms of durablity) softshell material I have seen in any jacket.

I'd say pretty minimal.  There's about 1" of "shell" material at the very top of the collar, then 2.5" of fleece that's been sewn in.  When I'm wearing it, the "shell" material is hitting me just under my jaw, and the fleece part is covering my neck.  Directly over the top of the zipper is a flap of shell material.  The shell material is soft enough that I don't see a problem with it rubbing against my neck a little.  The other softshell I have (Mountain Hardwear "Icestone") has an almost identical collar setup, and I've had no issues with that one.  The fleece on that one is a little bit closer to the top of the collar, but the collar also doesn't go up as far.

I actually didn't realize it looking at the jacket the other day, but that flap covers the entire inside of the zipper as well as going over the top, so you won't snag your layers on the inside of the zipper.
