Hey Ray!   yes er re bro!  the Filet Mignon of cajundom!  We fix this often at the hunting camp along with pot roasted tongue.  The left over tongue is thinly sliced and served with srambled eggs for breakfest the next morning.  and your white beans ....Blue Runners,  like to mash one can down real good and add to the rest....  you use the ham bone in there for flavor?

If ham bone isn't available, I use smoked ham hocks, and  at times, a little Veron sausage.
Some fresh pork sausage in the Mustard greens.
For Hors Devours, I butterfly pork tenderloins, stuff with boudin from Bayou Boudin in Breaux Bridge,tie with bakers twine, and place on the grill.

I could probably use a little pork in my meals!
