As long as you have well fitted boots, I would go with 162cm especially considering that these are intermediate skis and won't be overly stiff imo.  A stiffer ski will get better edge grip on hardpack as a rule of thumb.

I'd look at the Line Prophets if you are going to do 70% on trail, they will do better than the Blend on groomers...  They come in 90 and 100 waist.
